Gallo pinto

The national dish: rice and red beans fried together with onion and sweet pepper. It is eaten at any time of day, but especially for breakfast, with eggs, fried cheese, sweet plantain, corn tortillas and sour cream. If you only try one dish in Nicaragua, make it this one.

Nacatamal

Corn dough filled with pork (or chicken), rice, potato, sweet pepper, tomato and mint, wrapped in a banana leaf and cooked for hours. Tradition says you eat it on weekend mornings with bread and coffee.

Vigor贸n

A Granada classic: boiled cassava, crispy pork rinds and a tangy cabbage salad with tomato and vinegar, served on a banana leaf. Hearty, fresh and cheap, it is the street-food staple.

Indio viejo

Sopa de mondongo, made with tripe, vegetables and root vegetables, is a classic from Masaya. On the Caribbean coast, rond贸n (run down) is a fish and seafood stew with coconut milk, cassava and plantain, a legacy of Afro-Caribbean culture.

Tostones, tajadas and fried fish

Plantains are everywhere: thinly sliced and fried (tajadas), smashed and double-fried (tostones) or sweet and ripe. On the Pacific coast, do not leave without trying a whole fried fish with rice, salad and tostones, or a fresh ceviche.
